Rare Coffee Collection 01: Ethiopia Wine
Meet Ethiopian Wine, the inaugural limited-edition release of our Rare Coffee Collection, made from specialty grade Gesha beans. These beans are not only rare but undergo a specialized fermentation process for 92 hours. The result? A roasted and brewed coffee with developed flavors and notes akin to a natural wine.
This Gesha-region farm may not have the fame of Yirgacheffe or Guji, but it produces some of Ethiopia’s most prized varieties, including Gesha 1931 and its sibling, Gori Gesha, one of the oldest known coffee types originating from the nearby Gori Gesha Forest.
The farm maintains close control over picking and processing, producing everything from anaerobic and carbonic maceration to classic naturals. This lot is a sister to their Carbonic Maceration release, sharing a 92-hour fermentation but without added CO2. It was also picked from cherries with unusually higher sugar levels (22 compared to the typical 18).
This is one of the most distinctive coffees we have been able to bring in, complex, dynamic, and unforgettable.
