Black Cocoa Kloo Mascarpone Cake
Black cocoa espresso cake by @subynabakes soaked with Kloo's Craft Coffee Concentrate Kenya, topped with whipped coffee mascarpone cream and a dusting of cocoa.
Ingredients:
+ 8oz prepared Kloo coffee
+ 2 cups all purpose flour
+ 3/4 cup black cocoa (or sub natural cocoa)
+ 1 tbsp baking powder
+ 1/2 tsp baking soda
+ 1/2 cup neutral oil
+ 1 1/2 cups granulated sugar
+ 2 large eggs
+ 1/2 cup sour cream
+ 1 tsp vanilla extract
+ One shot of kloo coffee concentrate
+ 8oz mascarpone
+ 16oz heavy cream
+ 2 tbsp granulated sugar
Instructions:
1. Preheat oven to 350F/180C and grease & line a 9 inch baking pan.
2. In a medium bowl, whisk together the dry ingredients and set aside.
3. In a separate bowl, whisk together the oil, sugar, and vanilla. Add in the eggs and sour cream and whisk until combined.
4. Add half of the dry ingredients, followed by Kloo's Craft Coffee Concentrate, then the other half of the dry ingredients and mix until homogenous.
5. Pour batter into prepared pan and bake for 30-35 minutes.
6. Meanwhile, whip together the heavy cream, Kloo's Craft Coffee Concentrate, and sugar together until it forms stiff peaks.
7. Gently fold in the mascarpone and mix until fully combined
8. Once the cake has cooled, spread the mascarpone cream on the cake and dust with cocoa powder.
